Oatmeal Ginger Cookies



• 2 bananas
• 1/2 cup molasses
• 2 tsp vanilla
• 1 cup all-purpose flour
• 2 cups rolled oats
• 2 tsp baking soda
• 1 tsp ginger (I used 1½ tsp)
• 3 tsp cinnamon

I also added 1 egg,  approximate measurements: ½ c coconut, 1 c choc chips, 1 Tbsp. olive oil, a dash of Blue Agave Sweetener but you could use honey. Leaving the egg out might make it more cookie than cake texture. The choc chips could just be pressed onto the top instead of mixed in.

Instructions
Preheat oven to 350 F. Mash bananas, combine with molasses and vanilla. Mix together dry ingredients, add banana mixture, stir in rolled oats. Form teaspoon-sized balls, place on greased (or sprayed) baking sheet. Bake 10-15 minutes.

Archstone


Today was a GREAT day...I was able to get quite a bit accomplished, but still feel like I didn't do anything. I was able to fill out an application and secure a job out here in San Diego. I'll be working for an agency again and looking forward to meeting new people at work. I do miss all my friends back home from work - so many fun memories.

Then this afternoon, I went to the APPLE store and was schooled on how to use the MAC. I'm loving the opportunity of Apple One to One. I'm realizing I have lots to learn from them. I'm thankful they put up with all my questions. I'm liking all the shortcuts I learned today too.

So on my way home, I took a picture of this entrance to our apartment complex. I'm so thankful that Tim chose these apartments...they are in such a convenient part of town. They are close to The 5, UCSD campus, & The Beach. We are also in walking distance from Trader Joes, Whole Foods, Starbucks, Chipotle, BJ's, & A fresh produce market stand (that I LOVE). I'm becoming a daily customer at this stand. It's the best! ANYWAY, all that to say - Good Choice Tim~!

I did take many other pictures today, some of which I think are much better than this one, but this one is a memory. Tim & I went down to the beach again tonight to watch the sunset. So amazing to me to see the waves crashing, the sea lions hanging out on a rock, the seals hanging out on a beach, the sun setting, photographers with their tripods capturing breath taking scenes, & couples walking hand in hand enjoying the beach.

Sugar Free Cookies

While in La Jolla this last week...my sister-in-law made the best Sugar Free Cookie. We ate them all before I could get a picture to post :) We will definitely be making them again soon....pictures to follow Here's the recipe:

1/2 c butter                                       Heat oven to 350*
1/4 c molasses                                 Bake 12 minutes
1/4 c honey
2 eggs                                                Combine oats, flour, salt, soda,
1 t vanilla                                         cinnamon, nutmeg, cloves, and
1 1/3 c oats                                       dried milk in  a large bowl.
1 c flour                                                      
1/4 c dried milk                               Add softened butter; mix
1/2 t salt                                            until crumbs form.        
1 t baking soda
1 t cinnamon                                    In cup or bowl mix molasses,
1/4 t cloves                                        honey, eggs & vanilla. Gradually
1/2 - 1 c raisins                                add wet ingredients to dry; mix
1 c walnuts                                        until dough forms.  
1/2 c unsweetened coconut          

Will be rather soft & sticky. Scoop dough by the 1/4 cups
on cookie sheet. Flatten each mound into 2 1/2" rounds

Bake & Serve :)

La Jolla Shores Cove


Today, Tim & I went to La Jolla Shores Cove to watch the sunset...It was beautiful to say the least. I think God has some pretty amazing things planned for us, and I'm looking forward to catching them with the camera...I tried doing a 365 craft project last year, which was a bit unsuccessful, but am going to try again with a 365 Picture project. My goal is going to be to take one picture a day to journal our adventure. I love you Tim Cash and look forward to the plans that God has for us~!

Sugar Pancake

Beat together 2 eggs & 1/3 c sugar
Add 1 tsp cinnamon & 2 Tbsp oil, 1 cup milk
Mix all together.
Add 1 1/2 cups flour

Put in hot slightly greased pan. Brown on both sides.
Top with butter and sugar
